Seafood Paella

Ingredients
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 ½ cups Arborio or paella rice
  • 1 tsp smoked paprika
  • ½ tsp saffron threads (optional)
  • 3 cups chicken or seafood broth
  • 200 g shrimp (peeled and deveined)
  • 100 g squid, cut into rings
  • 100 g mussels (optional)
  • 1 cup frozen peas
  • 1 lemon, cut into wedges
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste
How To Do

    Sauté the vegetables: Heat olive oil in a large pan over medium heat. Add the chopped onion, red bell pepper, and garlic, and cook until softened, about 5 minutes.

    Cook the rice: Stir in the rice, smoked paprika, and saffron (if using), and cook for 2 minutes to lightly toast the rice. Pour in the broth, season with salt and pepper, and bring to a boil.

    Simmer: Reduce the heat to low, cover the pan, and let the rice simmer for 15 minutes, stirring occasionally to prevent sticking.
  • 4.
    Add the seafood: Stir in the shrimp, squid, and mussels (if using), along with the peas. Continue cooking for another 10 minutes until the seafood is fully cooked and the rice is tender.
  • 5.
    Finish and serve: Remove from heat and let the paella rest for 5 minutes. Garnish with fresh parsley and lemon wedges. Serve warm with extra lemon on the side.
