1.Sauté the vegetables: Heat olive oil in a large pan over medium heat. Add the chopped onion, red bell pepper, and garlic, and cook until softened, about 5 minutes.

2.Cook the rice: Stir in the rice, smoked paprika, and saffron (if using), and cook for 2 minutes to lightly toast the rice. Pour in the broth, season with salt and pepper, and bring to a boil.
