Pork Stew with Prunes in Creamy Sauce

Ingredients
  • 600 g pork shoulder or loin, cut into large chunks
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup prunes (pitted)
  • 1 cup beef or chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 1 tsp fresh thyme (optional)
  • Fresh parsley (for garnish)
How To Do

    Sear the pork: Heat the olive oil in a large skillet or pot over medium heat. Season the pork with salt and pepper, then sear the pieces until browned on all sides, about 4-5 minutes. Remove the pork from the skillet and set aside.

    Cook the onions and garlic: In the same skillet, add the chopped onions and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Simmer the stew: Return the pork to the skillet and pour in the broth. Add the prunes and thyme (if using), and stir everything together. Cover and simmer on low heat for 30-40 minutes, until the pork is tender.

    Make the creamy sauce: Stir in the Dijon mustard and heavy cream, letting the sauce simmer for an additional 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
