Ingredients
How To Do
-
1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant.
-
2.Add the diced sweet potatoes to the pot. Cook for another 3-4 minutes, stirring occasionally, until they begin to soften.
-
3.Pour in the chicken or turkey broth and bring to a simmer. Stir in the ground cumin, smoked paprika, and cinnamon (if using). Season with salt and pepper to taste.
-
4.Simmer for 15-20 minutes, or until the sweet potatoes are tender.
-
5.Use an immersion blender to partially blend the soup, leaving some chunks for texture. Alternatively, transfer half of the soup to a blender and process until smooth, then return it to the pot.
-
6.Stir in the cooked turkey and let it warm through for about 5 minutes. If using, add the heavy cream for a richer flavor.
