Turkey and Sweet Potato Soup

This hearty turkey and sweet potato soup is the perfect winter warmer. Packed with tender turkey, creamy sweet potatoes, and fragrant herbs, it’s a comforting dish for chilly days.

Ingredients
  • 2 tbsp olive oil
  • 1 medium union, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 2 cups cooked turkey, shredded or diced
  • 4 cups chicken or turkey broth
  • 1 cup water
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup chives, chopped
  • Croutons or crusty bread for serving
How To Do

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant.

    Add the diced sweet potatoes to the pot. Cook for another 3-4 minutes, stirring occasionally, until they begin to soften.

    Pour in the chicken or turkey broth and bring to a simmer. Stir in the ground cumin, smoked paprika, and cinnamon (if using). Season with salt and pepper to taste.

    Simmer for 15-20 minutes, or until the sweet potatoes are tender.

    Use an immersion blender to partially blend the soup, leaving some chunks for texture. Alternatively, transfer half of the soup to a blender and process until smooth, then return it to the pot.
  • 6.
    Stir in the cooked turkey and let it warm through for about 5 minutes. If using, add the heavy cream for a richer flavor.
