  • 2 salmon fillets (skin on)
  • 1 cup couscous
  • 1 ½ cups vegetable broth (or water)
  • 1 tbsp olive oil (for cooking)
  • 1 lemon (zest and juice)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh dill, chopped
  • Salt and pepper, to taste
  • 2 tbsp Greek yogurt (optional, for serving)
  • 2 tsp butter (optional)
How To Do

    Cook the couscous: Bring the vegetable broth to a boil in a saucepan. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. Add the chopped parsley, mint, and dill, along with lemon zest and juice. Season with salt and pepper to taste. Set aside.

    Prepare the salmon: Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.

    Sear the salmon: Heat olive oil in a skillet over medium-high heat. Place the salmon fillets skin-side down in the pan. Cook for 4-5 minutes until the skin is crispy, then carefully flip and cook for another 2-3 minutes until the salmon is cooked through but still tender. Remove from heat and allow to rest.

    Assemble the dish: Place a portion of herbed couscous on each plate, top with the pan-seared salmon. For extra richness, add a small dollop of Greek yogurt on the side or drizzle a bit of melted butter on top.
