Grilled Chicken Waldorf Salad with Herb Dip

This fresh Waldorf salad features grilled chicken, crisp apples, crunchy walnuts, and a creamy herb dip for a satisfying and healthy meal.

Ingredients
  • 2 chicken breasts, boneless and skinless
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup walnuts, roughly chopped
  • 1 large apple, thinly sliced (Granny Smith or Honeycrisp)
  • 1/4 cup dried cranberries or raisins
  • 2 cups mixed salad greens (romaine, arugula, etc.)
  • 1/4 cup celery, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • For the Herb Dip:
  • 1/2 cup Greek yogurt or sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1/2 tsp garlic powder
How To Do

    Rub the chicken breasts with olive oil, salt, and pepper. Preheat your grill (or grill pan) to medium-high heat.

    Grill the chicken breasts for 5-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes before slicing it into strips.

    In a large salad bowl, combine the mixed salad greens, sliced apples, walnuts, dried cranberries, celery, and red onion.
  • 4.
    In a small bowl, mix together the Greek yogurt (or sour cream), mayonnaise, lemon juice, parsley, chives, garlic powder, salt, and pepper. Adjust seasoning to taste.
